Daniel Ayres has been appointed operations manager for Ginza Restaurants, whose portfolio includes Serafina, Mayta, Simply Italian, Abyat and Real Madrid Café.
Ayres has gained many years of experience in restaurant operations, having worked as assistant restaurant manager at the 101 and Stay by Yannic Alleno at One & Only Resorts, where he was responsible for team development and training and overseeing restaurant operations.
He later joined La Serre Bistro & Boulangerie as assistant restaurant manager, and then moved to Jean-Georges Dubai in 2015 as assistant general manager, before being promoted to GM within 16 months.
Having contributed to overseeing all operational management, improved productivity, business development and administration of Jean-Georges Dubai, Ayres began overseeing restaurant operations in other Ginza outlets.
He took on his new role in March 2017 and will oversee the opening of new international brands for the group, set to open in the region shortly.
