Chef Maxime Le Van has joined newly-opened Italian restaurant, Via Veneto, in Manzil Downtown.
Previously executive chef at Boca Dubai, Le Van started his career in his native France before relocating to London where he worked as head chef of Michelin-starred restaurant, Club Gascon, and on the pre-opening team of its sister outlet, Cigalon.
During his time in the UK capital he also held roles at L’atelier de Joel Robuchon and the Paradise by Way of Kensal Green Gastro Pub.
In Dubai, Le Van worked on the pre-opening team of Kitchen 45 and held a two-year tenure at DIFC outlet, Boca, where he was executive chef.
Via Veneto, a concept by Gates Hospitality, is divided into two sections – the Cucina, located on the ground floor beside the terrace, and the Osteria upstairs.
The trattoria features a traditional wood-fired pizza oven and serves chef specials such as polpo alla griglia (marinated grilled octopus, potato and sweet pepper) and tagliata di manzo (sliced chargrilled flank steak with charred onions and grilled lettuce).
Commenting on his new appointment, Le Van said: “The opening of such a large venue means we have to fill it with personality, as well consider the needs in the market. Having the ability to be creative is always important and I think that brings the best out in any chef.”
