DoubleTree by Hilton Resort & Spa Marjan Island has appointed Murat Kara to the position of chef de cuisine at its restaurant Meze.
A spokesperson for the property said he will bring the tantalising flavours of the Mediterranean, Turkey and the Middle East.
Chef Murat said: “I am thrilled to take on this new responsibility and develop creative new dishes using some of the finest ingredients and condiments that will make the dining experience at Meze very special for our guests.
“Our Meze items include some of the most exquisite cuts of meat, seasoned with the right amount of fragrant spices that capture the flavours of the different regions of Turkey. The dishes are all assembled right at your table, so that diners have a very unique experience with their food.”
Prior to his position at Meze, chef Murat was the executive chef at Italian restaurant Frattelia La Buffala in Dubai, and he also served as head chef at Bosporus Restaurant where he managed the F&B requirements of both restaurants.
He also worked as a sous chef with the Shangri La Hotels and Resorts where he was responsible for the smooth running of the kitchen, including routine operations, food preparation and production, as well as supervising kitchen staff.
Chef Murat is also launching a range of new items on the menu, including the Meze specials, which are prepared and finalised at the diner’s table. Some of the items on the menu include the flamed wagyu beef ngiri with sushi rice barbeque mayo and crispy chips; open breaded lamb stew with saffron rice; live grilled US beef; live grilled wagyu beef; premium T-bone steak and grilled New Zealand lamb rack.
