Having embarked on his culinary journey 20 years ago in the emirate at the pyramids of Wafi, Chef Schilo van Coevorden returns to the city to create an epicurean experience with the opening of Taiko Dubai at Sofitel Dubai The Obelisk.
Taiko restaurant, the award-winning concept located in the Conservatorium Hotel in Amsterdam, was created by Executive Chef Schilo van Coevorden six years ago to honour the beautiful flavors and textures of the Far East.
Straight from Taiko Amsterdam and heading the kitchen is Chef Guido Wesselman. Bringing with him over 12 years of experience, he has travelled the world, immersed himself in an array of culinary adventures.
Alongside the menu are Taiko’s signature cocktails which take inspiration from a speakeasy in downtown Roppongi. The beverage menu has been curated by the Head Bartender who has crafted drinks inspired by Asian and Arabic flavours. With a signature creation for every season, the menu also boasts a collection of spirits, Sake, grapes and bubbly.
The restaurant includes an open kitchen revolving around a char-fired robata grill and a sushi bar angled into the space at 45 degrees to stage the drama of food preparation. Further adding to this dining experience, Taiko’s renowned live drum performance will take centre stage four times a week and a resident DJ will take to the decks playing into the evening.
Homage to Asian food, inspired by fresh and local ingredients, dishes have been curated blending Asian and Middle Eastern flavours, for example the Hirashama Kingfish Sashimi – a playful Japanese dish which been created with locally produced ingredients such as Persian saffron, black lime from Oman and fresh Pistachios from the Middle East.
Plus, Edamame and Black Garlic Hummus, the Arabic Lamb Gyoza, Lamb Chops, Daikon Salad, Miso Black Cod and Dynamite Wasabi Prawns.
