From the Bresse Region, Guest Chef Sylvain Sendra started his career in London and discovered the kitchen of product provided by Alexis Gauthier, a former Alain Ducasse. In his return to Paris, and after having created a concept of tapas “Parisian”, he embarked on a new adventure of the “Temps au Temps”, a tiny place of the 11tharrondissement in Paris that has quickly become a popular bistro.
Driven by the urge to expand and explore new adventures, Sylvain launched the restaurant “ITINERAIRES” which opened its doors in May 2008, a special new journey and personal development that allowed him to receive his first star in the MICHELIN guide.
Chef Sylvain has been chosen for his humble cooking demonstrations matching our Mediterranean European concept Aquario and our Chef William’s philosophy of French coastal food.
They have combined an elegant and well-balanced set menu were the two chefs from different backgrounds and experiences in French culinary techniques will be crafting a masterpiece in delicacies.
Guests can teleport to the Mediterranean coast where they can enjoy a premium selection of the freshest seafood such as Gillardeau oysters combined with sturia caviar, followed by a delicacy of deep-sea John Dory prepared and combined with acacia and champagne sauce. In their pursuit to add more earthy flavours, they have combined pigeon with sweet and sour feels from pomegranate molasses and redcurrant.
As a sweet end to the five – course menu, guests can expect a fresh coastal Mediterranean gourmandize ‘Fleur de Pave’, a blend of strawberry, pistachio, and almond milk ice cream
