Now that the UAE has entered its busiest season, the three major promotions reflect the rapid growth and development of the sophisticated hotel, and its commitment to empowering and nurturing its staff.
JeanYong Pittion has taken up the prestigious position of Director of Operations, while Carmine Pecoraro has stepped into his previous role of Director of Food and Beverages. Finally, Chef Jose Sanchez has joined the property in Carmine’s former post as Executive Chef.
Drawing upon his lengthy experience and valuable expertise, JeanYong aims to drive and motivate his teams and inspire them to reach new levels of success.
Having worked across the world in highly-regarded properties as far as London, Paris, Hong Kong, Macau, Jakarta and the French Riviera, his time as Director of Food and Beverage at Conrad Abu Dhabi Etihad Towers saw him increase the property’s F&B revenue by 60% in just one year, secure multiple awards for the hotel, and gain its position as host of the MENA’s 50 Best Restaurant Awards.
Rewarded for his great achievements with his well deserved promotion to Director of Operations, the driven and committed leader will now pour all his priceless insights, flawless organisational talents and exceptional people skills into ensuring total guest satisfaction across every element of the hotel.
Responsible for maintaining the hotel’s position as one of the finest destinations in the region, he looks forward to relishing every challenge and learning experience that comes with his new position.
He is now responsible for ensuring that every department exceeds their revenue and guest satisfaction targets, and he is already working on short and long-term strategies that will take the hotel to new levels of success.

He aims to use his new role to further cement the city’s position as one of the most attractive and desirable tourist and business destinations in the world.
Meanwhile, the fact that Carmine Pecoraro has already been promoted after just over a year at Conrad Abu Dhabi Etihad Towers, is testament to his incredible skills, hard work and natural talent.
The South African/Italian is now responsible for opening every new outlet, organising staff training for all team members, and managing the day-to-day operations of all 13 of the hotel’s award-winning restaurants. This includes Japanese restaurant Tori No Su, Arabic restaurant Li Beirut, Italian poolside escape Sole, the iconic Ray’s Grill and Ray’s Bar, and the much loved Nahaam Saturday brunch.
With over 20 years of experience in the industry, his unrelenting passion, commitment, and dedication made him the ideal professional to fill the role that JeanYoung left behind. As Director of Food and Beverages of Conrad Abu Dhabi Etihad Towers, he will use his hands-on leadership approach to mentor and guide his teams, and help each individual reach their full potential.
Taking on the most senior position in the hotel’s vast food and beverage department with ease, Carmine is now responsible for ensuring that the outlets continue to be recognised with various prestigious industry awards, and positive customer reviews.
Finally, Chef Carmine leaves his former role in very capable hands of Jose Sanchez. As Executive Chef, Jose will be responsible for managing all 120 chefs across the property, hiring for the 13 kitchens, initiating special events and campaigns, and leading any large-scale catering activations. Alongside this, he will continuously develop the bespoke menus of each distinctly different venue, and bring his own distinctive personality and style to the cuisine.
Born in Mexico, his 30 years of experience in the hospitality industry started at the Crowne Plaza Holiday Inn in Mexico City. After this he worked across multiple luxury five-star hotels, including positions in Tokyo, Osaka, New York, Guam, Philadelphia and Ethiopia. Now, he is thrilled to bring his skills to Conrad Abu Dhabi Etihad Towers.
A results-focused and efficient leader, he has a natural ability to charm and satisfy guests, and also inspire and motivate those who work around him.
During his first few months in his role, he will make it his priority to get to know all the regular guests by name, and connect with his team so that he can help and uplift them wherever possible.
