Embark on a journey across the Silk Route with a specially curated menu that stretches through the ages, drawing inspiration from royal kitchens of the Mughal empire that reigned South Asia between the 16th and 19th centuries.
Situated between the east and the west, the Mughal empire spanned from the Indus River and parts of Afghanistan, Kashmir and Bangladesh, all the way to southern India. With the establishment of the Mughal dynasty and legendary Silk Route, India, as did all countries along the route, witnessed a cross-influence of culture, cuisines and traditions: welcoming iconic culinary techniques from its neighbouring countries, while sharing age-old kitchen practices and secrets with them in return.
The experience begins with a selection of Ramadan staples: dates, karkade, qamardeen, tamer hindi and laban to break fast. The journey continues to shed light on key rulers and their influences on the Indian cuisine: Babur brought with him meat cooking techniques from Central Asia seen across a delectable selection of appetizers including a rich (chicken) Murgh Malai Kebab that uses cream and cardamom as its base, a spiced lamb Babari Seekh and a fresh Ajwani Fish Tikka.
The mains flaunt a warm and wholesome Hyderabadi Haleem, a preparation originally influenced by Iran and Afghanistan that combines lamb, broken wheat and onion into a warm and nutritious stew. Panchmela Dal, a melange of five lentils inspired by the kitchen of Queen Jodha Bai complements the simple flavours of Qubooli Pulao: a favourite of King Aurangzeb. Known for his preference of simple vegetarian food, the pulao is a rice preparation, accentuated by Bengal gram, apricot and almond, served with curd. An impressive dessert menu of rose-infused rice pudding and kulfi falooda seals the royal evening with a vibrant palette.
