As we enter a month of mindfulness and moderation, Jumeirah Restaurants marks the occasion all month-long by showcasing its sustainable dining across its award-winning portfolio.
In anticipation of Zero Waste Day on Saturday 30th March, guests can explore a diverse selection of Zero Waste menus, creating not only awareness but highlighting the importance of mindful consumption.
Spotlighting innovative dishes that already feature on the existing menus, the series also showcases the creative prowess and ingenuity of the talented Jumeirah chefs. Each dish reflects meticulous planning and thoughtful ingredient utilization, that minimizes waste while maximizing flavour and innovation, embodying the essence of zero waste thinking in gastronomy.
Here’s what’s in store from March 1st – March 30th:
Hillhouse Brasserie – Dubai Hills Golf Club
At the much-loved Hillhouse Brasserie, diners can delight in a delectable menu that exemplifies sustainable dining. Highlights from the carefully crafted selection includes Seabass En Papillotte, where every part of the fish is utilized, with trimmings and bones used in the fish stock and velouté, the Citrus Marinated Salmon, uses the trimmings to make the salmon rillette, beetroot trimmings for ketchup across other dishes and asparagus trimmings for the asparagus purée.
Another standout dish is the Slow Braised Beef Rigatoni, where beef cheek trimmings are transformed into a flavourful sauce.
The Duck Hook – Dubai Hills Golf Club
Over at the characterful country pub, The Duck Hook offers a hearty menu that continues to celebrate the ethos of zero waste dining. The menu features Steak & Ale Pie, where prime steak trimmings from weekend roasts are repurposed into a hearty and flavourful pie filling, Fisherman’s Pie, including salmon and cod trimmings to create a delicious filling and the Duck Scotch Egg, creatively using the cut-offs from the preparation of the Confit Duck Leg dish.
The Bolt Hole – Villanova
Through culinary exploration and an inspiring approach to sustainable dining, the family-friendly venue serves up an indulgent menu all while ensuring zero waste. Highlights include the Beef Roast and Chicken Roast, where every part of the meat and vegetables is utilized to create family meals, stocks and gravy, Mamma’s Green Curry uses a base made entirely of vegetables and herbs, with the onion and garlic skin for smoking and barbecuing and mint stems used to enhance the house mint gravy, while the Cauliflower Cheese utilises the entire cauliflower with cut-offs turned into velouté for the creamy cheese sauce.
Flow
Flow showcases the versatility of zero waste dining while carefully considering healthy and mindful eating. Guests are invited to explore the wholesome menu and savour the Juice of the Day, crafted from whole fruits to create refreshing and nutrient-rich beverages without any waste. Additional highlights include the Soup of the Day made with in-house trimmings to create a complex flavour profile and the Burrito Bowl where beef trimmings are used in pulled beef sandwiches, tomato trimmings from the salsa in tomato sauce and onion and pepper cut-offs in stock production.
The Noodle House
At Dubai’s homegrown Asian soul food concept, guests are invited to explore the creativity of the team and indulge in the Sticky Edamame with a Sticky-Spicy Sauce that uses every single ingredient without waste, the Korean BBQ Tofu where ginger and scallion cut-offs are incorporated into the vegetable stock, and the Whole Duck with trimmings turned into the flavourful Duck Baos.
The Noodle House prides itself in its sustainability initiatives as they were among the first UAE brands to introduce a ban on plastic straws and cutlery back in 2018, which was closely followed by the launch of 99% plastic-free and compostable home delivery packaging as well as seeded coasters and crayons, that transform once planted. The restaurant also rolled-out an electric bike delivery fleet, in partnership with UAE-born One Moto, reducing carbon emissions by 1,104 ppm per annum with each bike, equivalent to planting 82 trees per year for 10 years. In addition to the environmental benefits, The Noodle House does not bear fuel, maintenance, or servicing costs for its all-electric fleet.
Trattoria
The rustic Italian eatery, Trattoria, celebrates the occasion with a selection of traditional and contemporary Italian dishes. Dive into the Risotto Mantecato al Pistachio e Gambero Rosso, where shrimp shells are repurposed to create a flavourful bisque that’s used in both the sauce and cooking the rice, enhancing the dish’s flavour depth. Other highlights include the Grigliata Mista di Mare, featuring mixed grilled seafood served with baby vegetables, where vegetable cut-offs are incorporated into vegetable stock and fish trimmings in the calamarata pasta sauce and the classic Bruschetta Al Pomodoro, where basil stalks are used in vegetable stock and basil oil.
