Prized for their mesmerizing aroma and distinctive earthy flavour, white truffles – tuber magnatum – are among the rarest delicacies on earth. Found nestled in the roots of hardwood trees in Italy’s Piedmont region, the Alba white truffle is considered the pinnacle of the species. Their brief season, running from October 1st to January 31st, is a fleeting moment in the year when diners can experience their unparalleled magic. For centuries, truffle hunters, or trifolau, have ventured into the forests of Alba with specially trained dogs to uncover these hidden gems, a practice passed down through generations.
At TOTÓ Dubai, the chefs have crafted a menu that allows this rare delicacy to shine in harmony with the finest Italian classics, with freshly grated white truffle priced at 80 AED per gram. Guests are invited to begin with delicate Beef Tartare, heightened by Parmesan and nestled within a crisp black bread shell, or an Italian Burrata accompanied by cauliflower carpaccio and toasted pine nuts. Golden Arancini arrive bathed in Parmesan cream and truffle sauce, while a decadent Pizza pairs molten mozzarella with the unmistakable fragrance of truffle and aged Parmesan.
Handmade Tagliolini, dressed simply in butter, and a silken Parmesan risotto provide a canvas for generous shavings of truffle, while a rustic dish of Sunny-side eggs with Asparagus reveals
the ingredient’s power to transform the everyday into the extraordinary. For heartier appetites, Wagyu Beef Striploin and a showstopping Tomahawk Steak are paired with truffle potato cream and Jerusalem artichoke, creating a luxurious feast that is both comforting and indulgent. The experience culminates in a playful finale: a Truffle Parfait layered with white chocolate mousse and brownie, offering a sweet echo of the ingredient’s depth and decadence.

The White Truffle Special Menu is available for a limited time only at TOTÓ, Downtown Dubai, during the short season when these prized tubers are at their peak. Guests may elevate any dish with freshly shaved white truffle, priced at AED 80 per gram.
