
Moonrise, the homegrown fine-dining concept by Chef Solemann Haddad, is proud to announce Ashley Jane Rosenberg’s appointment as the new Restaurant Manager. Moonrise, the homegrown concept that has reimagined modern gastronomy under the visionary helm of Chef Solemann Haddad, continues its evolution with the appointment of Ashley Rosenberg, marking an exciting new chapter for the acclaimed fine-dining destination.
The appointment follows Moonrise’s recent transformation, including a complete interior redesign, a refreshed tasting menu and an even stronger focus on storytelling-driven hospitality.
Ashley, a South African native, brings a wealth of front-of-house expertise and creative leadership to the MICHELIN-starred restaurant. After graduating with a degree in Hospitality Management from the University of Johannesburg, she kicked off her international career in the United States with a competitive management traineeship in Connecticut, before rising through the ranks at some of Dubai’s most prestigious dining destinations.
Ashley’s love of food, wine and creating memorable moments for people has shaped her approach to hospitality. Her tenure at Ossiano, under Chef Grégoire Berger, was a formative chapter that deepened her passion for fine dining. Following that, she played an instrumental role in the success of Row on 45 by Jason Atherton, contributing directly to the team and helping retain the well-earned MICHELIN stars.
Ashley plans to lead with a focus on storytelling and guest interaction, complementing Chef Solemann’s deeply personal culinary vision. Her goal is to make the service feel effortless and genuine, reflecting the same creativity and warmth that has earned Moonrise its loyal following.
“Having two strong and creative personalities leading either side of the restaurant is a recipe for success. While Chef Solemann continues to push the boundaries of Dubai cuisine my role is to refine and rework the service experience, ensuring every guest leaves with a story to tell.”, says Ashley.
For Ashley, joining Moonrise represents both professional growth and a creative alignment with a restaurant that mirrors her values. “Moonrise has an energy unlike anywhere else.
