
Pablo Roldan’s journey in the hospitality industry began in the kitchens, even before he was fully focused on his studies. After exploring other fields unrelated to his passions, he found his true calling where the heat, hustle, and camaraderie of a restaurant come alive.
Starting as an apprentice at Restaurante ‘Kiki’ in San Sebastian, Pablo discovered the thrill and fulfillment of restaurant life – the team spirit, the intensity of service, and the dedication required to create an unforgettable dining experience. It was there, amidst traditional Basque cuisine and high-quality local produce, that he laid the foundation of his professional path.
His time at ‘Kupela,’ another celebrated restaurant in the region, became a significant turning point. Under the mentorship of a chef who emphasized the art of butchery and the importance of product excellence, he refined his craft and developed a deep appreciation for sourcing only the finest ingredients. It was during this period that he also learned the value of cultivating strong relationships with suppliers and connecting with guests ensuring that every dish tells a story of care and craftsmanship.
Driven by curiosity and a desire to grow, Pablo explored various restaurants in his area before taking a bold step abroad with the Dani García Group, joining one of their establishments in New York. Immersed in a cosmopolitan city pulsating with energy, he experienced hospitality from a global perspective. Over the next four years, his journey took him across countries, including Qatar, before he finally arrived in Dubai just over a month ago.
Today, Chef Pablo Roldan leads the culinary team at Leña Dubai, where he brings his passion for excellence, innovation, and teamwork to life. His diverse experiences have shaped a leadership style that is both approachable and inspiring, one that values collaboration, growth, and shared success.
Pablo remains grounded and curious outside of work, valuing meaningful moments spent in nature, over shared meals, or in pursuit of new knowledge. His initiative, organizational skills, and steady leadership make him a strong presence in the kitchen, where precision, communication, and passion converge. He continues to inspire his team to bring their best every day embodying the same dedication and drive that have defined his journey from San Sebastian to Dubai.
