Waldorf Astoria Ras Al Khaimah’s executive chef Rudolf Segers will travel to Beverly Hills in the US for the third annual Taste of Waldorf Astoria culinary competition.
Drawing on the heritage of Waldorf Astoria as a culinary innovator, five James Beard Rising Star Semi-Finalists have been paired with five Waldorf Astoria Master Chefs around the globe to re-concept ‘happy hour’ and create a “Fifth Hour” concoction – comprised of one cocktail, one mocktail, and two paired bites.
Chef Segers was paired with JBF Rising star chef Maximillian Petty, chef/owner of Eden Hill Restaurant (Seattle, WA).
The pair will present two dishes – scallops with caviar on a polenta and quinoa croquet finished with lemon, poached red onion vinaigrette and lemon gel, paired with the Big Apple cocktail featuring bourbon, apple juice, gold dust and foie gras spray.
The second creation is the Gyūniku or marinated beef tataki garnished with pickled beets, carrots and sliced radish on sourdough with beetroot mustard, paired with the crisp Asian queen tomato and soya mocktail.
Chosen by a panel of celebrity judges, the winning dish will be revealed on 12 July 2017 at the newly opened Waldorf Astoria Beverly Hills.
