Chef Josefinna Vallve has joined Palace Downtown Dubai’s Argentinean outlet, Asado, as chef de cuisine.
Vallve is tasked with delivering a new menu and being part of the launch of a new Grape and Harvest lunch concept, inspired by Latin American market food.
The chef will add dishes such as Chilean sea bass with squid ink risotto and slow-cooked short ribs with creamy mashed potatoes.
She is a graduate of Gastronomic Institute D’Gallia in Peru, where she earned distinction as a member of the honour roll.
Her experience includes stints at fine dining establishments focused on Peruvian cuisine.
