Italian restaurant Bocca at Hilton Abu Dhabi will be offering a dinner menu dedicated to the Italian region of Umbria from 8-21 April.
Leonardo Passone, chef de cuisine at Bocca, said: “Umbrian cuisine is perhaps Italy’s best kept culinary secret. Food and wine play a huge role in its charm, and we would like to bring the essence of this beautiful region and its flavourful dishes to the capital city of Abu Dhabi through this special menu at Bocca.”
Characteristic to authentic Italian cuisine, Umbrian dishes are simple and rely heavily on seasonal ingredients.
“Umbrian cuisine is about creating traditional dishes with minimal ingredients and methods using local products and of course Umbria’s liquid gold, olive oil,” Leonardo added.
The Umbria dinner menu kicks off with a marinated beef tartare with crunchy fennel and carrot in a pomegranate sour dressing, which is followed by lentil soup with croutons and freshly brewed Umbrian olive oil.
For mains, guests enjoy the popular tortelli stuffed with ricotta and walnuts with a creamy truffle sauce and slow-cooked duck legs with glazed vegetables in a puff pastry crust.
Dessert offerings include a ricotta cheese mousse with dark chocolate and pears poached in grape juice.
