Hilton Hotels has announced the appointment of Matteo Dayem as chef de cuisine at Waldorf Astoria Ras Al Khaimah’s poolside dining venue, Azure.
Beginning his career in his home country, Italy in 2011, Dayem’s culinary journey first took him to Kurdistan in Iraq followed by Dubai, before he was appointed as chef de cusine at Lithuania’s Le Meridien Grand Resort, Vilnius. Graduating to executive sous chef at Lisbon’s Sana Hotels in Portugal, Dayem returned to the Middle East in 2018 to take up the role of sous chef at Cipriani Riyadh, before continuing to hone his skills at Cipriani DIFC.
In his new role of chef de cuisine at Azure, Dayem will launch a brand-new menu at Waldorf Astoria Ras Al Khaimah’s beach-side dining destination. Inspired by the South of France and the Mediterranean, Azure offers a culinary selection of healthy, light meals with an abundance of choice and flavour, along with a delicious selection of freshly-squeezed juices, smoothies, and premium beverages.
Catering in and around the pool and beach until sunset, the bistro-style restaurant blends wholesome, honest, no-frills Italian food. The latest appointment to the food & beverage team at the property, Dayem’s exceptional culinary skills and classic Italian heritage are an exciting addition to the wealth of talent already in residence at the five star resort.
