Ergo Restaurant & Bar is proud to announce the appointment of Sebastian Layton as the new Head Chef. A native of Colombia, Chef Layton brings a wealth of International culinary experience to Ergo, having trained at the Gato Dumas culinary school in Bogota. He honed his skills at an Asian grill in his home country, before running his own Caribbean restaurant and opening a Latin American concept in the United States in 2018.
Chef Layton joined the team at Il Borro Tuscan Bistro in Dubai in 2019 and rose through the ranks due to his hard work and talent. Excited to further hone his culinary expertise, Chef Sebastian was in search of more opportunities when he discovered Ergo Bar and Restaurant. Eager to take on the role of Head Chef in 2022, he was determined to elevate the venue’s menu with his creative flair and cutting-edge cooking techniques.
Jimmy Barrat, the founder and bartending pioneer of Ergo, took notice of Sebastian’s skills and impressive drive and offered him the opportunity to join the Ergo team. He believed the young chef was the best fit to infuse Ergo with a vibrant and energetic spirit.

Chef Layton’s background and experience align perfectly with this philosophy, making him the ideal candidate to lead the culinary team.
