Meticulously selecting only the best, flaky leg meat for their dish, Chef Bojan utilizes the brown crab head to create a tantalizing crab-infused mayonnaise emulsion that imbues the crab with an additional layer of depth and savoury richness.
To enhance this remarkable creation, Folly’s team has sourced the exquisite Pusa Gulabi variety of white and pink radishes from the esteemed Greenheart Organic Farm. These vibrant radishes, meticulously cultivated using organic practices, serve as an exquisite garnish, adding both visual appeal and a delightful crispness to the dish.
In addition to the radish, we have prepared a refreshing cucumber gel and a tantalizing cucumber vinaigrette, complementing the flavours of the dish.
