Bar des Prés, the internationally acclaimed Franco-East Asian restaurant, helmed by celebrated Chef Cyril Lignac, is set to make its grand entrance into Dubai’s culinary scene on the 7th December 2024. Following successful openings in Paris and London, this will be its fourth location, bringing a unique blend of French sophistication and Japanese individuality to the 51st floor of ICD Brookfield place in the heart of DIFC.
Bar des Prés is part of a trio of groundbreaking concepts set to launch at ICD Brookfield Place, joining D.ream’s prestigious portfolio of luxury lifestyle brands, alongside renowned names including Amazónico, COYA, and Zuma.
Cyril Lignac is a culinary powerhouse, lauded for his entrepreneurial flair; his captivating on-screen appearances have created a devoted following in France and beyond. His ability to combine French tradition with contemporary style has made Bar des Prés a must-visit destination for food lovers and trendsetters alike.
Having launched in Paris in 2016 as an understated concept tucked away in the heart of Saint-Germain-des-Prés, the restaurant is now ascending to new lofty heights occupying the 51st floor of ICD Brookfield Place. As guests are whisked up the 53-storey tower they will step out onto a dining room that combines rich, bold tones and offers uninterrupted views of Dubai’s landscape. Staying true to its roots, the award-winning design studio Lázaro Rosa-Violán have incorporated key design features of mustard-coloured marble tables and the signature vibrant peacock-embroidered fabrics, that echo the original Paris location. Taking inspiration from the enchanting streets of Paris with their sinuous lines, range of heights and rich historical tapestry, a signature blue takes centre stage alongside copper tones, juxtaposed with bamboo and rattan accents representative of Bar des Prés’ East Asian influence.
The centrepiece of the space, the Sushi Counter draped by a dramatic light installation made from rough silk, paying homage to the heritage of Japanese silk production and its significant role in kimono fashion. With space for 10 diners, guests are privy to the ultimate interactive experience as chefs serve plates of California, Maki & Soya Maki rolls and Sashimi.
Elsewhere on the menu, dishes continue to seamlessly blend Lignac’s French culinary expertise with Japanese precision and creativity, showcasing exceptional seasonal ingredients whilst honouring traditional techniques. Diners can expect plates such as Citrus-marinated scallops, pickled radish & kumquat, A4 Wagyu carpaccio, wasabi ponzu, grated daikon & black truffle, crunchy crab & avocado galette and miso caramelised green asparagus, sesame & hazelnut to start. To follow, larger dishes of Langoustine Ravioli, Classic Bisque, Whole Crusted Sea Bass to share, breaded “Volaille des Landes” chicken, sriracha mayonnaise and A4 Kagoshima Wagyu beef sando.
As thoughts turn to dessert, elaborate creations that honour Lignac’s original training as a master pastry chef, whilst celebrating French classics will be revealed. Signatures include delicate vanilla Mille-feuille with pecan nut praline, a tower of Profiteroles served with vanilla ice cream and drizzled with chocolate sauce and airy Matcha Chiffon Cake.
The thoughtfully curated wine programme will complement the culinary offering, featuring an extensive and diverse menu of French wines. The 300 strong list will take cues from Cyril’s French background, celebrating the variety of wines from French regions. Meanwhile, the cocktail menu spotlights the Franco-East Asian inspiration including the Tokyo Garden (Tanqueray 10 gin, shizo, sake, yuzu, lychee) and Wasabi Martini (Ki No Bi gin, wasabi, Mancini Sakura Vermouth, peach Rinquinquin), and the Margarithai (Volcan tequila, lemongrass, Casamigos mezcal, lime, coriander, agave).
Taking guests from noon until late, Bar des Prés caters to a range of experiences, from languid lunches and decadent dinners to lively social gatherings. The Lounge boasts intimate armchairs, booths and a stunning bar set against a rich palette of vivid hues, bold patterns and mahogany wood detailing reinterpreting the aesthetic of a French bar a vins. The cocktail bar offers the ideal setting for pre or post dinner drinks as the sun sets over the city, or nightcaps accompanied by a DJ from 9pm nightly.
