His four-night residency at Soneva will see him craft an exclusive menu inspired by his Singaporean roots and Dubai-based culinary ventures – a thoughtful blend of flavours, textures, and storytelling that celebrates both heritage and innovation, and reflect the balance, precision and simplicity that have defined his career.
The special menu will take guests on a sensory journey through six diverse courses combining an orchestra of flavours. The first courseis Tanba Beans, prepared with Japanese Tanya black beans and clams, followed by the Onion Confit, plated with grape, truffle salt and white truffles, Threadfin or Branzino with blue ginger nage, charred scallions and sambal matah. Next is the Lamb Loin mixed with fragrant Kashmiri spices, pickled bok choy and yellow tomato tapenade. The finale is a celebration of the Maldivian Fruit Garden, a blend of locally sourced tropical produce presented with fresh sorbets, leaves and botanical herbs.
Set amid the Baa Atoll UNESCO Biosphere Reserve, Soneva Fushi pairs this culinary artistry with a setting of awe-inspiring beauty.
