Bringing an impressive industry profile to Raffles the Palm Dubai, Chef Sebastien Bernis joins the culinary team as Executive Pastry Chef, lauded for his incredible and personal approach to patisserie making.
With over 20 years of culinary experience, Chef Sebastien earned his stripes in the finest French establishments before pursuing a career abroad. After acquiring his professional pastry-making qualification in Souillac, South of France, Chef Sebastien went on to perfect his training at Michelin-starred restaurants, Grand Véfour and Hôtel de Crillon, before setting out to travel the world.
Continuing to build his international portfolio, his move to Dubai comes after a successful period of working with prominent luxury resorts and boutique hotels across the Caribbean, Polynesia, Oman, Egypt, Seychelles and Maldives, where took on the position of Executive Pastry Chef at the One&Only Reethi Rah, a member of The Leading Hotels of the World organization.
Prior to his current role, Chef Sebastien served as Executive Pastry Chef at the Mandarin Oriental Macau, China for 10 years. During his long flourishing tenure there, Chef Sebastien excelled as a leader in the pastry kitchen, contributing to the property’s Forbes five-star accolades for four consecutive years from 2019 to 2022.
Calling upon invaluable experience gained at some of the world’s finest hotels and from working alongside the most celebrated pastry chefs, Chef Sebastien is instrumental in establishing Raffles the Palm Dubai as a leading F&B destination in the UAE.
