Ambitious, creative and innovative, Chef Kanchana Ranasinghe brings over 20 years of experience to his new post at CouCou. Having previously worked in some of the region’s top kitchens, including Carine alongside Chef Izu and The Dubai EDITION hotel, his culinary finesse has garnered multiple awards and is testament to his unwavering passion for cooking.
As the Head Chef of CouCou, Kanchana applies his expertise by creating a vibrant menu that features a delicious medley of French, Mediterranean, and Peruvian cuisines. The trilogy offers guests an array of their favourite dishes, with no compromise on flavour or presentation.
Chef Kanchana goes to great lengths to source the finest ingredients from around the world, including aromatic olive oil imported from Greece, escargots from France, oysters from the crystal-clear waters of Ireland, meat from Canada due to its advanced breed selection and an array of spices from Peru.
His signature dishes at CouCou include yellow tail ceviche with aji amarillo dressing, 72-hour house smoked carpaccio, Tomahawk of Canadian heritage, and lobster linguine a la Provencale. Dessert lovers frequenting CouCou are well acquainted with reverse tiramisu, Demoiselle’s tarte Tatin, and incredible banana date cake.
When asked what his favourite ingredients are, he proclaims “olive oil, salt, and lemon. They are very simple additions; however, they can completely transform any dish.”
Since its recent opening, CouCou has risen through the ranks of the Dubai dining scene.
