Jumeirah at Saadiyat Island Resort, Jumeirah Group’s first eco-conscious resort, has announced the appointment of Italian chef Gaetano Luciano, Chef De Cuisine at its traditional Italian restaurant, Mare Mare.
In his new role as Chef de Cuisine, Chef Gaetano will be responsible for creating mouth-watering courses for the property’s guests using an eclectic mix of Mediterranean flavours and will head a diverse team of talented chefs at the dining venue.
The resort also welcomes Valentina Cukon as Restaurant Manager of Mare Mare at Jumeirah at Saadiyat Island Resort, who brings her Italian flair to the local community and guests looking for a culinary journey of Italy. With over a decade of experience in hospitality, she has worked at several restaurants and hotels across Italy.

With over seven years of culinary experience, the Italian-born Chef Gaetano’s passion and dedication in the world of gastronomy has played a pivotal role in refining his cooking skills, crafting unique delicacies whilst inspiring and leading teams around him. He started his culinary journey in 2015 at the Taste of Italy by Heinz Beck working as a Chef de Partie in Dubai’s Galleria Mall. He then moved up to Kitchen Manager at the popular Italian venue, Barilla, which was soon followed by his first role as Sous Chef at Larte Dubai, brainstorming creative Italian recipes and ensuring food quality was not just top-notch but also met all the necessary standards and guidelines.
In 2020, he became the head chef at popular Fratelli La Bufala, serving authentic Neapolitan pizzas made with the freshest ingredients and ensured maximum productivity of staff. Evidenced by his strong leadership skills and efficiency in the kitchen, he was called back to Larte Dubai, and made Head Chef, leading a team of dedicated chefs to create mouth-watering and authentic Italian delicacies. Over the last year, he worked as Chef de Cuisine at the mega-popular Marco Pierre White Steakhouse & Grill in Fairmont Bab Al Bahr, Abu Dhabi, overseeing the daily operations of the restaurant and the hotel’s kitchens.
Valentina Cukon, Mare Mare’s new restaurant manager boasts over a decade of experience in the F&B and hospitality industry. Her strong expertise managing popular Italian dining venues and hotels includes her role as Restaurant Supervisor at the Dopolavoro restaurant in JW Marriott Venice Resort & Spa and her Assistant Restaurant Manager roles at Relais San Lorenzo Hotel in Bergamo Alta and Jumeirah Al Qasr’s Pierchic. Most recently, she worked as a Restaurant Manager at Makorè, a fine dining restaurant in Ferrara, Italy.
