The UAE heats for the third edition of the Chaine des Rotisseurs Young Chefs Competition 2017 took place on Thursday 27 April at ICCA with 13 chefs from the country competing to go to the final.
The competition was headed up by Chef Daniel Hiltbrunner CMC, conseiller culinaire honoraire who unveiled a mystery box for the chefs to cook with.
Chef Hiltbrunner commented: “It was no surprise to see that this year’s Chaine competition was the event some chefs waited for with great anticipation. It’s gratifying to see that after just three years of running this competition, how popular it has become within the chef community here in the UAE.
“Thanks to Chef Uwe Micheel, director of kitchens at Radisson Blu Hotel Dubai Deira Creek and president of the Emirates Chefs Guild and a big thank you to all the judges who made time to come and give their expertise.
“Thanks also to our sponsors, Barakat Quality Plus, which provided us with all the fruit and vegetables for the mystery box and common table. Thanks to Mitras International Trading for the great seafood, ELFAB CO and Barakat Quality Plus for the main ingredients and ICCA who gave us the facility and hosted the competition.”
Following 30 minutes of menu-writing, the competitors began cooking with the mystery box ingredients, which comprised chicken quarters, chicken liver, king prawns, Asian seabass, baby leek, tarragon, yams, risoni pasta, golden beetroot, raspberries, mangos, star anise and white chocolate.
The judges were monitoring the chefs’ cooking skills, product usage, wastage, hygiene and work flow, and following a tasting session, the judges scored each dish on presentation, flavour and taste.
The winner of the competition was Malimage Ishra Chamika Perera from Radisson Blu Hotel Dubai Deira Creek.
Second place went to Aprian Herlambang from Atlantis The Palm and in third place was Ali Salleh from W Dubai Al Habtoor Hotel.
Chef Chamika will represent the UAE at the International competition in Frankfurt, Germany in September.
With nearly 25,000 members, the Chaîne des Rôtisseurs is an International Association of Gastronomy now established in over 80 countries bringing together enthusiasts who share the same values of quality, fine dining, the encouragement of the culinary arts and the pleasures of the table.
