Celebrate a prominent milestone where India celebrates a whopping 75 years of Independence the right way with the newly introduced “Heritage Dinner” specially curated by the award-winning, internationally renowned, Michelin star acclaim celebrity Chef Vikas Khanna.
The Indian heritage by itself is a melting pot of various cultures and religion. In celebration of this, Kinara is grateful to be a part of this prideful initiative by the Indian Embassy. This allows for Kinara to showcase an unmatched level of Indian hospitality, service and handmade delicacies that reflect the true history and diversity of India. Heritage Dinner pays homage to the humble inherited home cooked food with true depth, essence, flavors and memories.
From the 25th of June until the 30th of June, Chef Vikas Khanna will personally be present at Kinara as he showcases his handcrafted exclusive menu of innovative and traditional dishes for guests to indulge in. Diners will also be able to discover genuine Indian heritage with the rich knowledge and research of the world-renowned chef.
At AED320 per person, kickstart with the the appetizers; for those plant-based eaters Kathal Ki Shammi which consists of Jackfruit, refreshing Rose Labneh and delightful Mint Chutney. For the meat-lovers, enjoy the Gosht Ki Shammi which consists of Lamb, Rose Labneh and Mint Chutney.
Diving into the main course, choose from a variety of vegetarian and non-vegetarian options. Starting off with the vegetarian delights – Gucchi Bahaar, consisting of Kashmiri Morels, Saffron-Almond Gravy and aromatic Coriander Oil. Enjoy the authentic Indian delicacy Langar Waali Dal which includes Bengal Gram, Kidney Beans, Black Gram topped off with Clarified Butter or the Baghara Khuska, a simple dish consisting of the Indian favorite Basmati Rice, Cardamom and Black Cumin.
Meat-lovers indulge in the Murgh Qorma with Chicken Drumstick, Brown Onion Gravy and refreshing Yoghurt or the Hari Mirch Keema, a popular lamb-based dish consisting of Lamb Mince, Green Chillies seasoned with Green Herbs.
End on a sweet note with popular Indian delights including the rich Mughlai Shahi Tukda, the sweet touch of mangoes with Aam Ki Kulfi and the traditional pudding-like dessert Badam Ka Halwa.
Chef Vikas Khanna will also be launching his latest book “Sacred Foods of India”, which was meticulously written after years of research on the inspiring tale and the history behind Indian cuisine. The book truly captures the essence of the holy kitchens that represent the nature’s soul. Readers can be expected to be transported on an adventurous journey to the holy land of India, witnessing the humble and traditional roots of Indian cooking throughout.
In tune with this, Chef Vikas Khanna has thoughtfully transferred his sustainable style of living and standard into his book Scared Foods of India, where it is creatively and ethically engineered using sustainable Maple and Walnut Wood, printed using special vegetable ink sourced from Japan and uses acid-free paper sourced from the Sustainable European forests. For a hint of sparkle, the book is embedded with Swarovski crystals along with gold-gilded fore-edges and corners which truly adds a touch of elegance and class.
