
Restaurante Centroamericano is officially opening its doors on March 7th at the Anantara Hotel in Downtown Dubai. It will become the UAE’s first restaurant to bring together the diverse and vibrant cuisines of the Mesoamerican region under one roof, with a fresh and modern take on these rich culinary traditions. Led by Nicaraguan Chef, Gabriela Chamorro, Girl & the Goose – Restaurante Centroamericano is a deeply personal homage to her roots and lifelong passion for the flavors and techniques of seven Central American nations including Guatemala, El Salvador, Honduras, Costa Rica, Belize, Nicaragua, and Panama. The menu reflects her heritage as well as her extensive travels, blending regional culinary traditions with a global contemporary perspective. Brought to life in collaboration with Rosy Hospitality, a UAE-based F&B group with a shared ethos of creating feel-good dining experiences, the premium-casual restaurant exemplifies the group’s commitment to high-quality food, soulful service, and beautifully designed spaces.
A nostalgic space that feels like home
Girl & the Goose – Restaurante Centroamericano is the next chapter in the journey of Chef Gabriela’s beloved Dubai supper club, where she welcomed over 5,000 guests into her home between 2019 and 2024. Now transformed into a premium-casual dining destination, the restaurant spans 5,000 square feet, featuring a main dining area that includes a veranda-style open balcony overlooking the hotel’s garden courtyard, as well as two private dining rooms. The space, accommodating 139 guests, has been designed by UAE-based Portuguese artist Ana D’Castro in collaboration with Barcelona-based, Costa Rica born Brand-Strategist & Designer Emanuel Carballo. Drawing from his deep cultural expertise, Carballo infused the restaurant’s design and identity with regional heritage, carefully selecting patterns, colors, and textures while integrating indigenous influences. The result is a space that feels both authentic and inviting, creating a warm and welcoming atmosphere for all who enter.
The open-style kitchen, a key feature of the restaurant, allows Chef Gabriela to prepare dishes while engaging with her guests. A small kitchen counter with limited seats offers diners a direct view of the action, creating an intimate experience that echoes the warmth of her home supper clubs. This setup allows Chef Gabriela and her team to interact with her guests throughout the restaurant, adding a personal touch to every meal. Inspired by Mesoamerican and Spanish colonial influences, while the interiors feature terracotta walls and rattan lighting, it’s the architectural details that truly transport guests. The terracotta landing at the entrance, the door frame, and the traditional arches, which are key features of regional design, evoke a deep sense of nostalgia, while the niches filled with artifacts further reflect the rich cultural heritage. Together, these elements create a space that feels both timeless and deeply rooted in the region. A courtyard-style layout mirrors traditional regional architecture, while a striking birdcage-style bar pays homage to the birds commonly found in Central American homes.
Celebrating the spirit and legacy of the supper club, key elements from the original space have been woven into the restaurant’s interior design. One of the private dining rooms houses the iconic communal table from the supper club, where countless memorable dinners were served, building a unique identity based on the tradition of shared meals and storytelling. The iconic painting that once adorned Chef Gabriela’s dining room wall, serving as the backdrop to countless supper club group photos, now takes center stage in the private dining room, a visual nod to its journey from an underground experience to a permanent home.
A menu rooted in tradition and shaped by global influences
At Girl & the Goose, the menu tells a story of migration, adaptation, and culinary evolution. A result of Chef Gabriela’s extensive travels, the dishes honor the rich flavors of Central America, seamlessly balancing heritage recipes with modern influences.
The menu begins with Antojitos (starters) inspired by the vibrant street food culture of the region, featuring dishes like Nicaraguan pastelitos and Salvadoran pupusas, as well as a creative take on ceviches and Costa Rican Tacos, highlighting the region’s coastal flavors. Signature main courses offer bold interpretations of classic dishes, including sweet chili grilled prawns, achiote miso seabass, as well as slow-cooked short ribs served in a clay pot, a creation exclusive to the restaurant. To finish, the dessert selection shines with highlights like the not-so-traditional tres leches cake served with house-made artisanal mango ice cream and the hojuelas mille-feuille paired with house-made papaya ice cream, offering a sweet, tropical twist. The menu offers a more approachable alternative to the supper club’s intimate, individual dishes, with a focus on simplicity, flavor, and the joy of sharing.
A beverage menu that celebrates Mesoamerica
A tribute to the diversity of Central America, the beverage menu celebrates the seven nations with signature cocktails inspired by each country’s distinctive flavors. The beverage menu offers meticulously crafted alcoholic and non-alcoholic beverages infused with ingredients native to the region, alongside a thoughtfully curated selection of wines, beers, and spirits. A special “Supper Club Selection”, marked with a goose icon, highlights wines originally served at Chef Gabriela’s supper club.

The atmosphere is lively yet intimate, inviting guests to explore the menu through shared dishes and immerse themselves in the warmth of great food and Central American hospitality.
A variety of dining experiences bring the restaurant’s ethos to life. The Supper Club Experience, featuring a five-course tasting menu with a vegetarian option, will continue to provide guests with the opportunity to connect over a shared love of food and meaningful conversation. This experience celebrates the region’s rich flavors while fostering a sense of community, bringing together strangers to form lasting connections. Guests can also enjoy Tranquillo Hour (happy hour), a lunchtime menu, and a dedicated ladies’ night, and a specially curated kids menu, making Girl & the Goose a versatile and dynamic addition to Dubai’s dining scene.
