Global culinary phenomenon Chef Eyal Shani is bringing his soulful Mediterranean cuisine and lively party vibes to Dubai, with the opening of North Miznon at the Hilton DoubleTree in JBR this December.
With more than 40 restaurants across the world, from Paris, New York to Miami and Melbourne, the larger-than-life celebrity chef is best known for his vibrant Mediterranean street food at Miznon, and wild nights at HaSalon, where dinners segue into dancing on the tables – and napkin waving is de rigueur.
Drawing on the vibrant, vegetable-forward cuisine of the Med, the Miznon brand is best known for flavour-packed fine-casual fare, feeding people’s stomachs, hearts and souls. Signature Miznon moves include the whole-baked cauliflower that melts in the mouth, and pita breads brimming with locally specific fillings, whether that’s a cheese-laden burger pattie in New York, or ratatouille in Paris. “I take the main elements of the city and translate them into the fillings of a pita,” Chef Shani explains.
North Miznon takes things to the next level, delivering a more elevated, but no less enthralling dining experience in New York , Paris, Singapore and Vienna.
At North Miznon Dubai, the industrial-cool dining room mirrors the bold flavours on the plate, with vivid pops of pomegranate and turquoise, rustic timbers and exposed pipes. The interior design team at Colour And Age (CAA) Studio sourced original artworks, ornate light fixtures and vintage furniture from across the world, creating an eclectic, welcoming space with genuine warmth and personality.
Framed by a counter laden with farm-fresh produce, the open kitchen thrums with energy, as Shani’s team of chefs prepare a bounty of ingredients for the daily changing menu. Outside, the terrace has been transformed into a lush sea-view garden, providing the perfect setting for sunset drinks and late-night shisha.
And while the Miznon name is now found the world over, Dubai’s North Miznon is no cookie-cutter experience. Eyal Shani believes firmly in celebrating fresh, local ingredients, so you can expect to see an abundance of fish and vegetables on the Dubai menu, with seasonal vegetable small plates and larger fish and meat dishes designed to be shared. “I cannot change your life – but I can change one moment,” says Chef Shani. “I can give you an experience that will shake you.”

Chef Eyal Shani was born in Jerusalem in 1959. His culinary passion was first instilled in him by his grandfather, an agronomist and a dedicated vegan, who exposed him to local markets and farms from a young age. Shani opened his first restaurant, Oceanus, in 1989, and now has a thriving portfolio of over 40 restaurants worldwide, including the iconic Mediterranean street food eateries Miznon, and his party-ready restaurants HaSalon. He is considered one of the leading figures in the Israeli culinary scene, starring in the TV series Food for Thought and appearing on the panel of judges for six seasons of Israeli MasterChef.
