Kishmish, Dubai’s soulful Afghan restaurant, is thrilled to announce Iman Nazemi’s Supper Club Series – Tales through Taste, debuting on Wednesday, 29th January 2024. Taking on the theme of “Tachin Night“, this intimate gathering in Kishmish’s new kitchen space in Dar Wasl, invites 10 guests to share an exclusive communal dining experience inspired by Iman’s background, travels and culinary heritage.
Tahchin, derived from the Farsi/Dari words ‘tah’ (bottom) and ‘chin’ (to layer), is a visually stunning rice cake made with yoghurt, saffron, and aromatic spices. Its golden, crispy crust is achieved through a careful scorching process, while its layers are traditionally filled with chicken, meat, or served plain with a side stew.
For the first in the Supper Clubs Series, Iman will craft a selection of Tahchin dishes that showcase her roots and blend the flavours of both her worlds. Guests can look forward to unique creations such as a traditional saffron-infused Tahchin topped with sautéed barberries, slivered almonds, and pistachios; a Zereshk hybrid version layered with chicken in a rich saffron-onion gravy; and a delightful fusion of Afghan and Persian influences with dishes like the meatball Maqlouba. These mains will be complemented by fresh salads and cooling cucumber yoghurt for a balanced, satisfying meal.
Every element of the meal reflects Iman’s dedication to excellence and sustainability. The chicken is organic, hormone- and antibiotic-free, while the meat, butter, and ghee are grass-fed. The yoghurt is pasteurised, and the saffron, sourced from Afghanistan, supports female farmers. Whole spices are roasted and ground in-house to ensure maximum aroma and quality, adding an extra layer of authenticity to each dish.
