James Soo Yong Kim, CEO of White Hospitality, is set to redefine F&B industry in Abu Dhabi with the launch of six brand new dining concepts over the course of 2023—each of which promises to be a major milestone in White Hospitality’s mission to offer truly immersive dining experiences that are not just good for the customer, but for the planet too.
White Hospitality’s ambitious 2023 strategy includes the launch of five flagship fine-dining outlets—Dangereux (Mamsha, Saadiyat), White Izakaya (Yas Mall), and White Smoke Steakhouse (Al Seef Walk) Day and Nite (Al Seef Walk), and Provador (Reem Island)— each of which offers diners a unique fine-dining experience centered on the love of food and the joy of sharing, and inspired by James’ passion of cuisines from around the world.
Joining White Hospitality as the co-chef for Les Dangereux is Michelin star chef Llorenc Sagarra. Following 14 years as the Head Chef of the Internationally renowned Mugartiz of Spain, awarded 2 Michelin Stars and named no 21 on World’s 50 Best. Llorenc is set to bring his expertise to the soon to launch concept alongside James.
“We dreamt to be able to replicate our favourite restaurants from New York, Paris, Tokyo, Seoul, Austin, Texas—right here in Abu Dhabi—and to be able to do all the things that came from deep within our souls as nostalgic restaurateurs,” says James. “We want to serve guests food that we harvested from Abu Dhabi soil, with the ambition to bring the pulse of a true food capital into the heart of Abu Dhabi.”
Together with partner, Mohamed Juma Al Bawardi of Al Bawardi Enterprises / EMDAD, James is on a mission to forge a new standard in the GCC food and beverage industry by fusing commerce and sustainability. With the establishment of White Farms—a 52-greenhouse organic farm in Al Ain—White Hospitality is adding true farm-to-table capability to its dining concepts.
There are obvious benefits to attaching an entire farm to a hospitality group’s catalogue of restaurants, but James and Mohammed’s primary focus goes far beyond anything to do with cost savings or practicality.
“Our aim is to introduce the incredible advantage of using locally sourced produce that has been harvested that morning to be served that evening,” says James. “By doing so, we aim to begin the necessary journey to sustainability, which will become White Hospitality’s main focus going into 2024.”
James Kim hails from the kitchens of Blanca (2-Star Michelin), Roberta’s Brooklyn, Le Cirque (NY Times 3-Star), Danji (1-Star Michelin), with his last post in New York City as the Chef de Cuisine at Caviar Russe (1-Star Michelin) on Madison Avenue. Most recently James has entered the inaugural Abu Dhabi Michelin Guide with his newly opened Café James on Reem Island.
James’ experience in the food industry is broad and diverse, and in 2023, he plans to fully harness his extensive knowledge of upmarket fine-dining to elevate the Abu Dhabi scene by creating a more sustainable, more immersive experience that strips away the unnecessary rituals of fine dining and concentrates purely on the sensory stimulation of gastronomy.
