Executive Sous Chef Javier Arrebola Serrano and Pastry Chef Ashok Garg bring even more culinary creativity to the kitchen, while Louise Monk joins as Stables Manager of the Al Wadi Equestrian Center.
Having refined his craft across fine-dining restaurants in Europe, South America and the Middle East, Executive Sous Chef Javier Arrebola Serrano is tasked with elevating the dining experience of each of the resort’s four restaurants. With a passion for sustainability and horticulture, Javier will lead the cultivation of the resort’s 450 sq. meter garden to provide fresh vegetables and herbs for the restaurants, enabling exquisite farm-to-table dining. Known for introducing revolutionary new techniques, dishes and flavours, Javier will focus on developing creative and sustainable seasonal menus.
With a flair for patisserie, Pastry Chef Ashok Garg has joined The Ritz-Carlton Ras Al Khaimah, Al Wadi Desert to develop a new menu for the resort’s new equestrian eatery, The Paddock Café. Committed to delivering the gold standard of hospitality, Ashok has worked at several Ritz-Carlton properties in Oman, the UAE and Bahrain which makes him the perfect candidate to introduce a new bakery and pastry-focused menu.
In her role as Stables Manager of the Al Wadi Equestrian Center, Louise Monk will oversee the management of the stables operation, including the training, caretaking and rehab of the 16 in-house horses. Bilingual in English and Arabic, Louise has extensive experience in the Middle East including Jordan, Saudi Arabia and will now supervise the horse riding lessons for experts and other equestrian activities at the resort.
