Proudly retaining two MICHELIN-stars for two consecutive years, STAY by Yannick Alléno at One&Only The Palm introduces topical curated menu additions, staying true to bringing together seasonally evolving spreads.
Chef Yannick, with 16 MICHELIN stars on his portfolio and a career spanning over four decades, continually strives to redefine and elevate modern French cuisine. With his vision of marrying traditional cooking methods with modern culinary advancements, the new signature dishes are a perfect reflection of his “savoir faire”, refinement, and creativity.
Settling into the dramatic monochrome dining room, diners can begin the indulgent journey with Steamed Cheese Soufflés or the Sturgeon Nonette. The high timber theatrical walls, and a bold palette of black bronze and silver exude elegance and taste, perfectly complementing Chef Yannick’s newest creation, the Blue Lobster “Civet” a’ la Bordelaise for mains. A delightful conclusion to the experience is two new dessert options including Citrus Soufflé and Chocolate Pailles. While guests enjoy Chef Yannick’s witty creations, the restaurant continues to serve with intentional elegance and a ‘less is more’ approach.
The newest creations are also incorporated within the guest favourite tasting menus. The ‘Emotion’ experience highlights five courses including locally sourced “Basquaise Style” Marinated King Fish, Steamed Cheese Souffle and Pears Tatin, while the ‘Experience’ menu features locally sourced Portobello Mushrooms Cooked like Abalone, Sea Bass “Aiguillettes” and Citrus Soufflé, making these a true sensory insight into Chef Yannick’s experimental vision.
Guests can dine in Chef Yannick Alléno’s presence at One&Only The Palm between 16th October and 19th October. The restaurant is open from Tuesday to Sunday (closed on Mondays), from 7am until 11pm.
