To celebrate its 15th birthday, Anantara Hotels & Resorts has launched “Life is a Culinary Journey”, a collection of recipes from chefs and sommeliers across its hotels.
The recipes, from the brands hotels in Thailand, Cambodia, Vietnam, China, Qatar, the UAE, Mozambique and the Maldives, have been selected from Spice Spoons cooking classes.
The interactive cooking classes feature indigenous dishes from each resort, paired with signature wines recommended by resident sommeliers.
Spice Spoons commences with a local activity such as selecting ingredients during a market tour, choosing fish at the harbour after a fishing trip or harvesting coconuts to use in a curry.
At the hotel, guests tour the resort’s herb garden and receive a Spice Spoons shopping bag containing a chef’s hat, apron and a box of recipe cards.
During the cooking lesson, the chef uses displays of typical local ingredients and traditional cooking equipment to explain the main characteristics and preparation of each dish.
Participants are also informed about the dishes’ origin, what time of day or special occasion it would be eaten and its health benefits, along with suitable alternative ingredients to use at home.
Culinary students learn to cook their chosen dishes in a step by step class at individual cooking stations, before enjoying their creations during a meal hosted by the chef.
Guests are also taken on tours of vines for grape tasting and food pairing activities with the resident sommeliers.
Anantara Hotels & Resorts currently has 35 properties located throughout the Middle East, Asia and Africa.
