

Anantara Mina continues to enrich its dining landscape with two exceptional guest chef experiences at Mekong restaurant. As part of the resort’s vision to bring global gastronomy to Ras Al Khaimah, guests are invited to enjoy exclusive evenings with Chef Noom of Chim by Siam Wisdom in Bangkok and Chef Chanoh Lee of Seoul’s Manu Terrace to our scenic venue beside the lagoons.
On 19 and 20 December, from 7:00 pm – 11:00 pm, Chef Noom will present an exquisite five-course selection that captures the essence of Thai cuisine through a contemporary lens. As Executive Chef of Chim by Siam Wisdom, he has led the restaurant to nine consecutive Michelin stars. In 2024, it was honoured among the Top 20 Best Restaurants by Tatler Asia.
His style is grounded in authentic Thai traditions further elevated by European techniques, developed during his time at acclaimed restaurants including Blue Elephant, Thai Square, Sketch, Zuma and Gordon Ramsay. A former Thai Iron Chef winner and judge on Kitchen Wars Thailand, Chef Noom is known for creations that honour Thailand’s rich culinary heritage while introducing new perspectives.
The event is priced at AED 595 per person, inclusive of soft beverages, with an optional wine pairing available at an additional AED 200. Seating is limited and available by reservation only.
Signature dishes include grilled scallop with gorlek sauce, lobster with a mango and chilli relish, and singhol curry with tender beef cheek. Each plate combines depth of flavour with visual appeal, offering a true taste of Thai sophistication.
In January, Mekong will host Korean Chef Chanoh Lee, who is celebrated for his contemporary global vision using Korean ingredients – gained while training in Australia, France and the Netherlands.
His sophisticated interpretations of Korean fare have been showcased in collaborations with international luxury brands and hotels across the Middle East.
By welcoming a Korean chef to Mekong, it adds another dimension that remains true to the restaurant’s philosophy. The country’s cuisine has become one of Asia’s most expressive and influential culinary movements and presenting it through a Michelin-recognised artistic voice allows guests to experience a wider story of Asian excellence while keeping Mekong’s flavour-driven focus at the fore.
Chef Chanoh Lee’s five-course tasting menu will be presented at Mekong on the 23 and 24 of January 2026, from 7:00 pm to 11:00 pm. The menu is priced at AED 595 per person with soft beverages included, and a wine pairing option is available for an additional AED 200. Reservations are required as seating is limited.
Highlights from the menu include butter-poached lobster with doenjang sauce, uni and scallop in a delicate soy glaze and braised short rib with aged white kimchi. Each course is designed to express harmony between tradition and innovation, with recipes that balance taste and presentation beautifully.
