Tashas Group, the powerhouse hospitality brand, proudly announces the promotion of Coralie Doillet to the position of Beverage Manager for Tashas Group UAE. With over a decade of experience and a rich background in mixology and hospitality, Coralie’s journey epitomises dedication, creativity, and multicultural flair.
Originating from Bordeaux, France, and affectionately known as “Coco,” Coralie’s passion for hospitality was ignited during her tenure as a waitress at Le Grand Hotel. Her journey traversed continents and simultaneously learned English while exploring Colombia, Ecuador, and Peru. The basis of her education was culinary arts, she transitioned to mixology, honing her craft in bars across the globe, from the iconic Caracas Bar in Buenos Aires to the bustling Coconut Club in Barcelona.
Coralie started her career within Tashas Group in December 2020 when she joined Galaxy Bar. Within a few months, she showcased her creativity and passion, crafting innovative cocktails that captivated guests and kept them coming back to the venue. Her signature creation, the ‘Little Prince’ Cocktail, quickly became a hallmark of Galaxy Bar’s menu, blending Roku Gin, Sour Cherry Sencha Tea Cordial, and Sakura Flower into a delightful concoction.
Since joining Galaxy Bar, Coralie’s talent and dedication have shone brightly, earning her nominations for various local awards and opportunities to represent Galaxy Bar on the global stage, including shifts in renowned bars in Bangkok and Athens. Her most recent accolade was being named the Mixologist of the Year at the Caterer After Dark Awards 2023.
As Beverage Manager, Coralie will support the beverage team alongside Beverage Director Krystian Hordejuk with her distinctive blend of expertise and creativity. Her vision for the group’s beverage program aims to elevate the guest experience across all UAE venues. The first step in her new role was introducing a series of strategic activations, including the Galaxy Bar 2024 interstellar collaboration program, “Eyes on the Stars.” As her role and responsibilities expand beyond the walls of the venue, she ensures she actively curates a selection of beverages that harmonise with each venue’s identity and the group’s ethos.
In her downtime, Coralie enjoys reading, cooking, painting, and dancing. She draws inspiration from literature for her creative cocktail concoctions and experiments in the kitchen, infusing her dishes with culinary flair. Coralie also expresses her creativity through painting and finds joy in dancing. Her innovative approach to mixology extends to developing unique cocktail garnishes, such as flowers and tea leaves, showcasing her commitment to elevating the craft.
