
HANU, a new wave of contemporary Korean dining at St. Regis Gardens, Palm Jumeirah, welcomes Seoul’s SOUL, a one-Michelin-starred restaurant redefining contemporary Korean cuisine, for an exclusive two-night collaboration. Taking place on 5 and 6 November, the event will feature Chefs Heeeun Kim and Daehyun Yoon, the duo behind SOUL, who bring their acclaimed approach to Dubai for the first time, joining Chef Kyung Soo Moon at HANU in a cross-cultural dialogue that bridges Seoul and Dubai.
Founded under the BY SOUL Group, Chefs Kim and Yoon oversee a portfolio that includes SOUL Dining (Michelin 1 Star), Egg & Flour (Michelin Guide Bib Gourmand), and Wooahan Kitchen Studio, a creative platform for high-end catering and brand collaborations. At SOUL, they interlace traditional Korean foundations with Western precision, often weaving seasonal herbs and edible flowers from their own garden into dishes that embody wit, sentiment, and identity.
Each evening will showcase a fourteen-course omakase experience co-created by HANU’s Chef Kyung Soo Moon and SOUL’s chef couple, Heeeun Kim and Daehyun Yoon. The menu reflects the dialogue between Chef Moon’s refined interpretation of Korean heritage and Chef Kim and Yoon’s signature style, blending traditional Korean foundations with Western technique. From HANU, the selection features dishes such as Beef Broth, Prawn, Hanwoo Tartare crowned with caviar, King Crab, Lamb Galbi, Hoengseong Hanwoo with eight banchan, the classic Naengmyeon with white kimchi and vegan caviar, Sujeonggwa (cinnamon punch), and an artistic Dasik selection. From SOUL, highlights include Pumpkin, Ceviche, Oyster, Potato, Fish and a refined Dessert course.

Hosted at HANU’s Chef’s Table, the dinner will feature two seatings, at 6 PM and 9 PM, on 5 and 6 November, limited to just 10 guests per session. The experience is priced at AED 895 per person and is available by reservation only.
