
INA Dubai begins the new year with a special edition of its Masters of Fire Guest Chef Series, welcoming Danny Africano, chef-owner of Lignum in County Galway, Ireland, inspired by the craft of cooking over open flame.
The collaboration launches with two opening evenings on 7 & 8 January from 6.30 pm onwards, with Africano in attendance at INA to introduce the menu and bring his wood-led style to life in person.
Aficionado’s approach is based on wood-fired techniques, fermentation, and seasonality, informed by a deep respect for locality, principles that align well with INA’s commitment to fire as a fundamental ingredient, a craft, and a means of expression.
Founded in 2019, Lignum, Latin for “wood”, has garnered acclaim for its bold yet meticulous tasting menus that change with the seasons. In 2025, the restaurant was awarded its first Michelin star, solidifying its status as one of Ireland’s most exciting dining destinations. The culinary style of Chef Africano, shaped by his Italian heritage and rural Irish upbringing, has been refined through his experiences in kitchens across Singapore, New York, and Melbourne. He uses fire and smoke not just for show, but to convey a story, balancing Irish produce with Italian sensibility in a manner that is both primal and refined.
Menu highlights for the collaboration will include Brown Crab with pine nut paste, sweet cicely, and caviar; Black Garlic Tartlet with aged beef tartare and smoked attica cream; Grilled Squid with coriander paste, braised kombu in blueberry, almond milk, and Lignum preserves; and BBQ Blue Lobster with pumpkin and strega sauce, rhubarb root oil, fig leaf oil, served alongside wood-fired olive oil brioche.
