This time, they are introducing the vibrant and eclectic flavours of Goa, where Indian and Portuguese influences come together in a space designed for guests to unwind, socialise, and savour a diverse menu of flavourful bites and must-try drinks.
Viva La Goa transports guests through centuries of colonial history, from the arrival of the Portuguese to the present day, where Goa’s post-colonial legacy is still evident in its architecture and unique flavour pairings. The calming space perfectly balances sophistication with casual friendliness, making it an ideal spot for relaxing and enjoying great company over delicious food and drinks. The menu is a tribute to Goa’s rich culinary heritage, featuring tapas-style bites and innovative drinks created by Trèsind’s award-winning mixologist Shefali Singh. Guests can treat themselves to a selection of creative cocktails, starting with the Porto Tonico, a light and refreshing mix of dry white port and tonic that brings out subtle floral aromas and crisp, fresh flavours. The Lisbon Daiquiri puts a fun spin on the classic, combining Cachaça, pear, Cointreau, and a bright splash of citrus for a vibrant and zesty experience. For something with a Goan touch, the Caju Sour uses cashew nut whisky, blending it with lemon, honey, and aquafaba for a smooth, slightly sweet finish. Viva La Goa also offers a range of cocktails that pair perfectly with cigars, like the Rusty Maple, featuring walnut bourbon, maple syrup, aromatic bitters, and a caramelized walnut twist.
