A brand new team has been appointed at Jumeirah Restaurant Group’s over-water seafood outlet, Pierchic.
New general manager Julian Biddulph was previously general manager at Jumeirah Restaurant Group’s The Ivy, and before that worked with Melia Hotels International, Swissôtel The Stamford, Singapore and St. Regis Doha.
Also joining the team are head sommelier, Sarah Belanger, previous head sommelier at Intersect by Lexus in DIFC.
Following the transfer of Pierchic’s previous head chef Rosalind Parsk to The Ivy at Jumeirah Emirates Towers, Paul Lupton has taken the reins of the culinary team.
Chef Lupton previously worked as executive chef at Asia de Cuba, Abu Dhabi, and before that was head chef at St. Regis Abu Dhabi.
He also spent nearly a decade working at Gary Rhodes’ restaurants, including City Rhodes and Rhodes 24 in London, and Rhodes Mezzanine in Dubai.
Other additions to the team are chef de cuisine, Salvadore Estanque and assistant restaurant manager, Sylvester Sequeira, both of whom have moved over from The Ivy.
Pierchic recently announced its upgraded summer brunch offer and the team is currently developing a new culinary offering, with a focus on sustainability and theatrical dining.
