Chez Wam, the contemporary dining hotspot at St. Regis Gardens, has quickly gained a reputation for its creative approach to food, music, and community. Chef Hadrien, the mastermind behind Chez Wam, is teaming up with Chef Qais to deliver a dining experience that’s a harmonious blend of French and Arabic roots, dynamic, and deeply inspired by the art of sharing.
Some of the best ideas start over a few drinks, and that’s exactly how this collaboration was born. When Chef Hadrien from Chez Wam Dubai and Chef Qais from Shams El Balad in Jordan met at Cairo Food Week last year, they clicked instantly. Every time Qais visits Dubai, they catch up, talk food, and share their love for flavours that tell a story. Now, for one night only, they’re bringing their combined creativity to the table for Coolab Vol. 4—an unmissable dining experience on Friday, March 21 from 6pm until closing.
Both chefs come from different culinary worlds—Qais’ approach is rooted in rustic, homey Palestinian-Jordanian flavours, while Hadrien brings a modern touch using French technique. But their philosophy is the same: high-quality ingredients, bold flavours, and a menu that’s fun, not pretentious. The menu they’ve crafted is a blend of Chef Hadrien’s French influence and technique combined with Chef Qais’ Arabic roots, all with a twist. It’s comfort food elevated with French refinement, offering a fresh take on classic flavours. Expect a mashup of styles, from hummus reimagined with king crab and yuzu black curry to Bassal Mahshi Canard à l’Orange with spiced confit duck leg and seared foie gras. Qais’ famous grape leaf fried chicken gets a Dubai-style upgrade with a caviar topping, and the burrata is given an Arabic fattoush spin with sumac-date-pomegranate dressing.
Designed to be shared, the menu features six starters, four mains, and three desserts, offering a mix of classic dishes with unexpected twists. Highlights include Chez Warma Al Balad, a decadent take on shawarma with confit beef, foie gras, honey and Ras el Hanout dressing, and the indulgent Quatre Fromages Shish Barak, featuring pinenut milk and coriander oil. Dessert is just as playful—imagine a Baklava Nouveau with praline chocolate and tahini ice cream or a Riz Au Lait infused with brown butter and caramel.
Priced at AED 495 per person, this unique dining experience is a celebration of friendship, flavour, and culinary craftsmanship. Drinks are available à la carte. With only one night to experience this collaboration, booking is highly recommended.
