
To mark the start of the new year, Rosewood Abu Dhabi invites guests to an intimate artisanal experience welcoming Chef Matteo Temperini, two-MICHELIN-starred Chef at Rosewood Castiglion del Bosco, Tuscany, for a special two-day gastronomic exchange alongside Executive Chef Liborio Colonna, Rosewood Abu Dhabi. Taking place on 23rd and 24th January, the experience reflects Rosewood’s shared philosophy of craftsmanship, sense of place, and ingredient driven cooking.
Rooted in a heartfelt respect for land and provenance, the experience brings together two chefs connected by a belief in refined simplicity and expressive cuisine. Chef Matteo Temperini draws inspiration from Tuscany’s landscapes, traditions, and seasonal rhythms, leading Campo del Drago to its second MICHELIN Star, a milestone that places Rosewood Castiglion del Bosco among pItaly’s most distinguished dining destinations. His philosophy begins with the land, sourcing from the estate’s organic garden and working directly with producers to shape every element that reaches the plate. In Abu Dhabi, Chef Matteo Temperini joins Chef Liborio Colonna, whose culinary direction continues to shape Rosewood Abu Dhabi’s dining destinations through curated storytelling, precision, and emotional connection, shaping global influences into experiences grounded in authenticity and detail.
The experience unfolds across two settings, on Friday, 23 January, guests are welcomed to La Cava for an elegant evening centred around a thoughtful selection of Castiglion del Bosco wines, paired with refined canapés created by both venues. Set within La Cava’s atmospheric cellar setting, the evening highlights the natural dialogue between food, wine, and terroir. The curated canapé selection includes Gillardeau Oysters, King crab croquettes, Coppa & Foie gras toast, and traditional Tuscan Cantucci almond biscuits, offering a balanced expression of Italian heritage and contemporary technique. The evening runs from 6:00 PM to 10:00 PM, priced at AED 385 per person.
On Saturday, 24 January, the journey continues at Rosewood Terrace with a four-hands dining experience celebrating Italian heritage through a contemporary lens. Guests will be guided through an exclusive six-course dinner curated exclusively for the occasion, featuring standout dishes such as Gambero Rosso with caviar, Sorrento lemon, Carnaroli risotto with ‘Dolce Forte’ duck, and rabbit and Swiss chard agnolotti finished with black truffle, alongside a refined turbot course showcasing seasonal produce. The experience concludes on a sweet note with green apple and dill mousse with ginger and lime, followed by an espresso dessert. The dinner takes place from 7:00 PM to 10:00 PM, priced at AED 750 per person for the menu, with an optional wine pairing at AED 450 per person, thoughtfully curated to complement the menu.
