
Chef Nicolas Madueno, Executive Chef, Taj Jumeriah Lakes and Towers Chef Nicolas Madueno, affectionately known as Chef Nick, has recently been appointed as the Executive Chef at Taj Jumeirah Lakes Towers in Dubai. In this role, he oversees the culinary operations of four distinct restaurants, bringing with him a wealth of international experience and a passion for creating unique dining experiences. Originally from Peru, Chef Nicolas culinary journey spans over two decades across luxury hotels and resorts in the Caribbean, Middle East, Asia, Africa, Europe, and South America. His extensive travels have allowed him to immerse himself in diverse cultures and cuisines, enriching his culinary repertoire.
In 2024 alone, Chef Nick consulted across 14 countries, showcasing his adaptability and commitment to global culinary excellence. His expertise includes a deep understanding of Nikkei cuisine—a harmonious blend of Peruvian and Japanese flavours—reflecting his dedication to fusing culinary traditions. Prior to joining Taj JLT, Chef Nick contributed his skills to esteemed establishments such as Kempinski Muscat, Hyatt Regency Istanbul, Marriott Marquis Doha, Hilton Congo, Patina Maldives and more. His professional journey is marked by a relentless pursuit of innovation, including redefining sushi presentation to enhance visual appeal and crafting Instagram-worthy dishes.
Embracing the moniker of a ‘professional nomad,’ Chef Nick’s global experiences have profoundly influenced his culinary style, allowing him to create dishes that resonate with a diverse clientele. At Taj JLT, he aims to align with the brand’s legacy by developing concepts that offer unique and immersive dining experiences. Beyond his professional endeavours, Chef Nicolas is a devoted father to a multilingual daughter who speaks five languages, often referring to her as his personal ‘Google Translate.’
