A renowned face throughout the globe, Chef Alexandros ‘Sperxos’ Pavlopoulos, an award- winning Chef found his passion for Mediterranean Cuisine at his family’s business, a hotel and restaurant in the picturesque mountain village Ano Loussoi, Kalavryta, Greece.
Chef Sperxos expresses – “Growing up in Kalavryta, my family was always surrounded by incredible farms and we always had such great produce! Unfortunately, Greek cuisine doesn’t get quite as much attention around the globe as many other cuisines. I’ve always wanted to show the world the experiences I’ve been so lucky to have, such as collecting fresh herbs from the mountains near my family home. I find the best way to do this is to take thousands of years of great culinary tradition and modernize them, both in terms of palatte and presentation.”
Chef Sperxos has promoted the Greek and the Mediterranean gastronomy in Singapore, Italy, Papua New Guinea, Sri Lanka and around GCC countries.
He moved to Dubai 6 years ago thriving in his career moving up through the ranks of the culinary arts. He then spread his wings by starting his own project as the Founder and Executive Chef of Efzin Kitchen Lab as well making numerous appearances on TV shows, radio, print and digital.

The dishes are inspired by the traditional Greek style with a modern twist giving his clients a glimpse into the heart of Greece. His signature dishes are almond crusted feta infused with pomegranate honey, lamb shank with tarhana (traditional pasta) and lamb loin souvlaki with truffle and seafood infused with saffron and oregano subtly decorated with edible purple flowers and micro greens as his stamp on the culinary industry tasting as good as it looks.
Chef Sperxos comments – “The Greeks have always been artistic people. I can’t act, draw, paint or sculpt but I’ve always loved expressing a different side of my creativity on a plate.”
He and his highly qualified team of chefs are now bringing their innovative vision and distinctive taste to the Expo 2020 representing the Greek traditional food in a fine dining style restaurant in the Greek Pavilion.
