Paolo Bellamio, previous head chef at Trattoria has taken on the role of executive chef at Pierchic. Both restaurants are located at Madinat Jumeirah.
Bellamio, from Italy, moved to Dubai in 2010 and has worked at Café Florian; on board the Costa Crociere cruise liner, where he catered for 2,700 passengers; and at Rosso at Amwaj Rotana Jumeirah Beach Residence.
Commenting on his new role, Bellamio told Catering News: “Pierchic has gone through a number of changes over the past year. I see this as a fantastic opportunity to bring my own personality and flair, creating a unique, magical and memorable experience from start to finish using my culinary knowledge and modern cooking techniques.
“Jumeirah Restaurant Group regularly rotates chefs through venues to allow us to continue to enhancing our skill-set, exposing us to a diverse portfolio of kitchens, cuisines and dining styles and building our reputation throughout the industry.
“It also gives the restaurants the opportunity to develop menus, enhance offerings and maintain a healthy, fresh perspective on objectives, goals, and positioning. Pierchic is one of my career highlights, and I look forward to making an impact in an organization I will continue to grow with.”
Bellamio completed his studies in 2001 and started his career working in restaurants in his home town of Padova, Italy.
His cooking style is to keep things simple and use the freshest, highest quality produce available.
Discussing his plans for Pierchic, he commented: “I have some exciting plans for the Pierchic menu. With new menu items, my own take on current dishes and a few European and modern Italian tweaks, the Mediterranean menu is certainly something to keep your eye on. I can’t reveal too much just yet, but I promise it won’t disappoint.”
