In celebration of its 3rd anniversary in the UAE, Bombay Borough, the all-day Indian bar and eatery in DIFC, will introduce a limited-time ‘Culinary Episodes’ à la carte menu offering a glimpse into India’s diverse ingredients, regional cuisines, cooking techniques, sweet traditions and vibrant cultures. The new menu highlights the foundations of India’s culinary landscape and presents a creative range of dishes with a progressive spin. The exclusive menu will be available from 26th January to 26th February 2023 and includes a series of five episodes, each covering curated regional delicacies and showcasing an abundance of rich, complex and hyperlocal flavours that take diners on a culinary journey through India.
The first culinary episode features a platter of breads representing India’s multicultural history and communities. Diners can treat themselves to five unique breads featuring a Manglorean-inspired Crisp Rice Roti served with a spicy, tangy and aromatic Kori Gassi Butter as well as a traditional Jungle Bread wrapped around a stick of lemongrass and served with fermented Bird’s Eye Chilli Chutney. Furthermore, the second episode consists of a Morel Exclusive Plate that utilizes an array of the world’s rarest and most expensive Gucchi Mushrooms sourced from the foothills of the Himalayas. These are stuffed and grilled in exotic Indian spices and slow-cooked in an earthen clay pot to enhance its aromas.
The third culinary episode highlights distinctive roast styles across India. Guests can opt for indulgent offerings such as the Rajasthani Duck wrapped in pastry and cooked using a customary Indian Khad technique and a Miso Tandoori Spatchcock Corn Fed Chicken cooked using the modern sous vide method. The fourth episode serves a platter of Winter Vegetable Yakhni Pulao that uses fragrant-filled Buddha Rice with a black husk, an Indian food heritage considered as one of the finest rice varieties in the world. The final culinary episode is an ode to nostalgic desserts with an assortment of treats like the Jim Jam Fudge – a classic twist on a childhood favorite snack by integrating a chocolate fudge with Jim Jam Cookies, and Imli Candy Profiteroles inspired by raw mango candies readily available in India at every street corner.
The exclusive Culinary Episodes à la carte anniversary menu is a delectable take on classic Indian flavors. When coupled with the eatery’s British and French-influenced interiors with marble-top tables, vibrant teal sofas and graceful cherry blossoms, it promises gastronomic experiences in a classy atmosphere ideal for making memories with family and friends.
