Award-winning and culinary leader in the Northern Emirates, Hilton Ras Al Khaimah Beach Resort is excited to announce the appointment of a new Executive Chef, Edward Mair.
Originally a native of Scotland, Edward’s passion for the culinary arts started at the age of 15 at which time he was deeply influenced by his mother’s cooking during his childhood, leading to a lifelong innate curiosity about food and the spirit of exploration for delicacies.
With a myriad of experiences, awards, and working in a Michelin star kitchen under his belt, Edward started his career with Turnberry, a luxury collection resort in Scotland where he spent nine years fine-tuning his craft. His career then took him to Dubai where he was able to grow his expertise as a Sous Chef and Chef de Cuisine at The Westin Dubai, Mina Seyahi, and Al Qasr, Madinat Jumeirah.
Edward’s worldwide culinary journey continued in Europe, The Middle East, and Far East Asia including the pre-opening of The Westin Haikou where he was the Executive Sous Chef in charge of 120 chefs and stewards. Edward’s relentless need to hone his talent saw him as Executive Chef at other five-star properties including Fairmont Nanjing, Four Seasons Hotel Shanghai, Fairmont Chengdu, and Niccolo Hotel Chengdu where he was instrumental in ensuring the overall increase of F&B revenue, increasing the GES food quality score, improving overall hotel food safety and gaining certification.
Speaking on his appointment, Edward said: “My love and passion for pursuing excellence has brought me back to this visionary country and I am honoured to be a part of the valuable long-standing Hilton brand. I look forward to positively impacting the resort’s culinary experience for it’s guests with my previous successes and would like to thank the brand for their support and trust as I take on this new role working alongside the resort’s exceptional team.”
Edward’s new role will see him bring his 22 years’ experience to lead the resort’s culinary team, overseeing nine venues including the famous Latin/Caribe VIDA Churrascaria and Arriba rooftop bar, Italian Piaceri Da Gustare, The Kitchen ADD, SOL Beach Lounge & Bar and the contemporary Lebanese Al Maeda. His philosophy for cooking can be broken down into three main pillars: legacy, excellence, and results-oriented.
In his free time, Edward enjoys traveling the world and spending quality time with his family.
