The recently opened Play Restaurant and Lounge at H Hotel has appointed Jean Marc Petrus as general manager.
The restaurant, which offers a blend of Asian and Mediterranean cuisine dubbed ‘Mediterrasian’ is a concept by Treenergy Management and Absolute F&B Management.
Petrus began his hospitality career in South Africa, where he worked with Hyatt Hotels & Resorts as a pastry chef, before moving to the role of executive pastry chef for La Galawa Beach Hotel in the Comoros Islands.
His first role in Dubai was as pre-opening assistant pastry chef at One & Only Palace Resort, where he held an eight-year tenure.
Following this, Petrus moved to Bateux Dubai as operations manager before joining Zuma Group as lounge manager, then assistant general manager.
Petrus moved to London to manage Coya, before returning to Dubai to open Coya at Four Seasons Resort Dubai at Jumeirah Beach.
Now general manager of Play Restaurant and Lounge, Petrus is part of a team of renowned names in the region’s F&B industry.
This comprises Elie Khoury, managing director of Play and Treenergy management, and Reif Othman, ex-regional executive chef of Zuma Restaurants for Dubai, Abu Dhabi and Istanbul, and director of Absolute F&B Facilties Management.
Commenting on his new appointment, Petrus said: “Play was the perfect next step for me as it gave me the opportunity to apply my expertise to a home-grown concept and work alongside some of the industry’s most valued talents. Elie Khoury, Reif Othman and I were given a blank canvas to ‘Play’ with. We hope that the end result will be a reflection of our fruitful collaboration.
