A doer in every sense of the word, Sydney has been at the heart of many of Park Hyatt Dubai’s successes. Under his leadership, the resort’s Traiteur Brunch was awarded “Best Brunch in Dubai” for two consecutive years, among a host of other accolades. His relentless commitment to quality, innovation, and execution has set new benchmarks in the region’s luxury dining scene.
If there is one thing that defines Sydney, it’s his work ethic – at 7:30 AM sharp, he is on the floor, leading his team, ensuring that every detail is executed to perfection, and often being the last to leave. His leadership is hands-on, his approach solution-driven, and his impact undeniable.
Reflecting on his promotion, Sydney Stranger shared: “At Park Hyatt Dubai, we are not just creating meals – we are crafting experiences that stay with our guests long after they leave. With over 26 years of experience in the hospitality industry, Sydney has built an impressive career spanning some of the world’s most prestigious kitchens and luxury hotels. Before joining Park Hyatt Dubai, he held leadership roles at Jumeirah Group, where he was Executive Chef at Al Qasr and Dar Al Masyaf, overseeing multiple fine dining outlets, private dining experiences, and large-scale catering operations. His tenure at Jumeirah also included leading culinary teams at Jumeirah Beach Hotel and Wild Wadi Waterpark, where he played a key role in menu development, HACCP compliance, and concept innovation.
Sydney’s experience also extends to pre-opening expertise, having played a pivotal role in launching culinary concepts for Zabeel House Dubai, where he led multiple hotel openings under the Jumeirah flag. Prior to his tenure in the UAE, Sydney honed his craft in London’s luxury dining scene, working at The Westbury Mayfair, Charlotte Street Hotel, and Clos Maggiore, where he developed his expertise in fine dining, menu engineering, and high-end guest experiences.
Leading a team of over 240 professionals, Sydney now oversees 15 diverse restaurants, exclusive private dining experiences, and high-profile events, ensuring that Park Hyatt Dubai remains a leader in luxury gastronomy.
As Director of Culinary, Sydney will continue to drive innovation, quality, and guest satisfaction, cementing Park Hyatt Dubai’s reputation as one of the city’s most sought-after luxury dining destinations.
