Trèsind Studio and The Tasting Class have come together to enhance the Studio’s gastronomic experience with the award-winning restaurant launching a new grapes pairing journey to accompany its latest seasonal menu, Spice Odyssey, on Thursday, July 29, with a special service featuring Tasting Class founder, Lindsay Trivers.
When you have a tasting menu as extensive as that offered at Trèsind Studio, it is difficult to find one solitary bottle that works with everything. Indian cuisine features incredibly complex layers of flavours and textures in a single dish, all of which should be considered when designing a pairing. It is a complex cuisine to pair if you don’t have the experience to get it right – so Trèsind Studio chose to join forces with The Tasting Class to devise a pairing using their expert knowledge.
“There are many factors that contribute to the complexity, from the frequently present sweetness which can make your wine taste sour, to the chilli heat which can be amplified when paired with high alcohol wines,” says Lindsay Trivers, CEO at The Tasting Class.
“A great wine pairing will work harmoniously with the major flavour characteristics of a dish, and this was my goal when designing a pairing menu,” adds Trivers. “The right wine will bridge the many elements incorporated in a dish, and the wine pairings designed to accompany Chef HImanshu Saini’s complex dishes result in an enhanced dining experience.
“Working with Chef Himanshu and his team to put this together was incredible, and I truly believe the pairings will elevate what is already one of the best dining experiences in the city,” she explains.
Guests can experience the latest 14-course menu from Trèsind Studio, Spice Odyssey, for AED 495 per person and add a pairing journey for AED 330 per diner.
